Health Awareness and Weight Loss is on the rise in today's World. Health issues, such as Diabetes, are effecting more and more people everyday. The sudden change of diet can seem that, now, boring and tasteless foods have to be consumed. I'm here to tell you that this Does Not have to be the case. With a little imagination and cooking techniques, we can make flavorful food that is pleasing to the Palate. Smaller Portions, for calorie reduction and metabolism boosting, and Healthy foods can be Palate and Stomach satisfying.
With diets.... comes Vegetables. Vegetables can be mono-flavored and just darn right boring. In this dish, I have amped up the flavor of the Cauliflower with a Neutral Vinaigrette of Extra Virgin Olive Oil and Fresh Squeezed Lime Juice. Fresh squeezed Lemon Juice can be substituted.
This, Atkin's and Keto friendly, Dish is a Tomato Salsa with a Neutral Vinaigrette dressed Charred Cauliflower and a Sunny-Side Up Egg.
Salsa:
Tomatoes
Roasted Onion
Roasted Jalapenos
Garlic, Fresh or Powder (Powder gives a Bolder Flavor)
Tomatoes are very Acidic. Roasting the Onion brings out the natural sweetness of the onion. The sweetness of the onion balances the acid from the tomatoes. Jalapenos bring a slight heat to the Salsa. Remove the seeds and white ribs of the jalapeno to bring down the heat, if you so desire. Garlic is added traditionally, and Blend. I am a lover of Garlic. I even put Garlic in my Cereal lol Just Kidding.
Neutral Vinaigrette:
Extra Virgin Olive Oil
Fresh Squeezed Lime
I like to use the 3:1 Ratio. Three parts EVOO and One part Lime/Lemon Juice. Combine in a bowl and whisk. You'll see the mixture get thick. This means the Oil and Juice have emulsified.
Charring the Cauliflower
In a Sauce Pan, add a little butter and melt it down on a medium high heat. Add your Cauliflower and Shake or Stir for the first minute or so. You should see some browning on the Cauliflower. At this point, let it sit as it is and add a lid. Leave until you see smoke coming from the Pan. Have no fear, it is not burning. The Cauliflower is charring. Check the Cauliflower for dark browning.
If Cauliflower does not look like this... leave it for a few more seconds and should look like this. Cauliflower will have a slight nutty and smoky flavor. Toss Cauliflower in your Vinaigrette. Check for flavoring. If Flavor is not to your liking, Fortify flavors with a touch more Oil or Juice. Don't forget to Salt and Pepper.
Just make the Sunny-Side Up Egg and Salt and Pepper your Egg for more Flavor. Now for Plating. A couple Tablespoons of Salsa on the bottom. Cauliflower on top of the Salsa and Sunny-Side Up Egg on top of the Cauliflower. That is a Wrap for the Dish.
